Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1/2 cup tapioca starch
  • 1/4 cup sugar
  • Oil for deep frying

Instructions

  1. In a pot, steam the sweet potato cubes until they are soft, about 10 minutes.
  2. Mash the steamed sweet potatoes in a bowl and mix in the tapioca starch and sugar until a dough forms.
  3. Roll the dough into small balls, about 1-inch in diameter.
  4. Heat the oil in a deep fryer or a deep pot to 350°F (175°C).
  5. Carefully drop the sweet potato balls into the hot oil and fry until they are golden brown, about 3-4 minutes.
  6. Remove the fried sweet potato balls from the oil and drain on paper towels.
  7. Serve the sweet potato balls warm and enjoy!
