Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1/2 cup tapioca starch
- 1/4 cup sugar
- Oil for deep frying
Instructions
- In a pot, steam the sweet potato cubes until they are soft, about 10 minutes.
- Mash the steamed sweet potatoes in a bowl and mix in the tapioca starch and sugar until a dough forms.
- Roll the dough into small balls, about 1-inch in diameter.
- Heat the oil in a deep fryer or a deep pot to 350°F (175°C).
- Carefully drop the sweet potato balls into the hot oil and fry until they are golden brown, about 3-4 minutes.
- Remove the fried sweet potato balls from the oil and drain on paper towels.
- Serve the sweet potato balls warm and enjoy!
