Sweet Potato Fritters (Buñuelos de Camote)

Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground anise
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 eggs
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the mashed sweet potatoes, flour, brown sugar, cinnamon, anise, salt, and baking powder.
  2. Beat the eggs and add them to the sweet potato mixture, stirring until well combined.
  3. Heat the vegetable oil in a deep skillet over medium heat.
  4. Scoop spoonfuls of the sweet potato batter and carefully drop them into the hot oil.
  5. Fry the fritters until they are golden brown on all sides, about 2-3 minutes per side.
