Ingredients

  • 2 large sweet potatoes, grated
  • 1 small onion, finely chopped
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons water
  • Oil for frying

Instructions

  1. In a large bowl, combine the grated sweet potatoes, chopped onion, flour, baking powder, paprika, salt, black pepper, and chopped parsley.
  2. Add water to the mixture and stir until well combined.
  3. Heat oil in a frying pan over medium heat.
  4. Scoop spoonfuls of the sweet potato mixture into the hot oil and flatten with a spatula.
  5. Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
  6. Remove the fritters from the oil and place them on a paper towel to drain excess oil.
  7. Serve the sweet potato fritters hot and enjoy!
