Sweet Potato Fritters, known as Siphuphe Sempunga in Eswatini, are a popular snack or side dish made from sweet potatoes. They are crispy on the outside, soft on the inside, and packed with flavor.
Ingredients
- 2 large sweet potatoes, grated
- 1 small onion, finely chopped
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons water
- Oil for frying
Instructions
- In a large bowl, combine the grated sweet potatoes, chopped onion, flour, baking powder, paprika, salt, black pepper, and chopped parsley.
- Add water to the mixture and stir until well combined.
- Heat oil in a frying pan over medium heat.
- Scoop spoonfuls of the sweet potato mixture into the hot oil and flatten with a spatula.
- Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- Serve the sweet potato fritters hot and enjoy!
