Sweet Potato Nachos, also known as Nhopi Nachos, are a delicious and unique twist on traditional nachos. This Zimbabwean-inspired recipe combines the earthy sweetness of sweet potatoes with savory toppings for a flavorful and satisfying snack or meal.
Ingredients
- 2 large sweet potatoes, sliced into rounds
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup black beans, cooked
- 1 cup corn kernels
- 1/2 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup sliced jalapenos
- 1/2 cup shredded vegan cheese
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the sweet potato rounds with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
- Arrange the seasoned sweet potato rounds in a single layer on a baking sheet and bake for 20-25 minutes, or until crispy and golden brown.
- Remove the sweet potato rounds from the oven and top with black beans, corn, tomatoes, red onion, jalapenos, and vegan cheese.
- Return the nachos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh cilantro.
- Serve the sweet potato nachos hot, and enjoy!
