Sweet Potato Nachos (nhopi Nachos)

Ingredients

  • 2 large sweet potatoes, sliced into rounds
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup black beans, cooked
  • 1 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup sliced jalapenos
  • 1/2 cup shredded vegan cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the sweet potato rounds with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  3. Arrange the seasoned sweet potato rounds in a single layer on a baking sheet and bake for 20-25 minutes, or until crispy and golden brown.
  4. Remove the sweet potato rounds from the oven and top with black beans, corn, tomatoes, red onion, jalapenos, and vegan cheese.
  5. Return the nachos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and garnish with fresh cilantro.
  7. Serve the sweet potato nachos hot, and enjoy!
