Sweet Potato Pastelón

Ingredients

  • 2 large sweet potatoes, peeled and sliced
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1 cup tomato sauce
  • 1/4 cup olives, sliced
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the sweet potato slices in salted water for 5 minutes, then drain and set aside.
  3. In a skillet, heat the vegetable oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
  4. Add the ground beef, oregano, cumin, salt, and pepper. Cook until the beef is browned, then stir in the tomato sauce and olives. Simmer for 5 minutes.
  5. Layer half of the sweet potato slices in a greased baking dish. Spread half of the beef mixture on top, then sprinkle with half of the mozzarella cheese. Repeat the layers.
  6. Bake for 30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
