Sweet Pumpkin Fritters (Kabak Mücveri)

Ingredients

  • 2 cups grated pumpkin
  • 1/2 cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the grated pumpkin, flour, chopped onion, minced garlic, parsley, dill, salt, black pepper, and cumin until well combined.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Scoop spoonfuls of the pumpkin mixture and carefully drop them into the hot oil, flattening them slightly with the back of the spoon.
  4. Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  6. Serve the Kabak Mücveri hot, with a side of yogurt or a squeeze of lemon juice.
