Ingredients
- 1 cup glutinous rice flour
- 1/2 cup water
- 1/2 cup sweet potato, cubed
- 1/2 cup ripe jackfruit, sliced
- 1/2 cup sago pearls (tapioca pearls)
- 1 can (14 oz) coconut milk
- 1/2 cup brown sugar
- 4 cups water
Instructions
- In a bowl, combine glutinous rice flour and water to form a smooth dough. Shape the dough into small balls and set aside.
- In a pot, bring 4 cups of water to a boil. Add the sweet potato and cook for 5 minutes.
- Add the sago pearls and cook for another 5 minutes or until translucent. Then, add the jackfruit and cook for 2 minutes.
- Pour in the coconut milk and bring to a gentle simmer. Stir in the brown sugar until fully dissolved.
- Gently drop the rice balls into the pot and cook for 10-15 minutes or until they float to the surface.
- Once the rice balls are cooked, remove the pot from the heat and let it cool slightly before serving.
