Sweet Rice Dumpling Pudding, also known as Pitha Kheer, is a traditional dessert from Jharkhandi Cuisine. This creamy and indulgent pudding is made with rice dumplings, milk, and sugar, and is flavored with cardamom and saffron.
Ingredients
- 1 cup rice flour
- 1/2 cup water
- 6 cups milk
- 1 cup sugar
- 1/2 tsp cardamom powder
- A pinch of saffron strands
Instructions
- In a bowl, mix the rice flour and water to form a smooth dough. Shape the dough into small dumplings.
- In a large pot, bring the milk to a boil. Add the rice dumplings and cook for 20 minutes, stirring occasionally.
- Once the dumplings are cooked, add sugar, cardamom powder, and saffron. Simmer for another 10 minutes.
- Remove from heat and let it cool slightly before serving.
