Ingredients
- 2 cups rice flour
- 1 cup jaggery (grated)
- 4 cups coconut milk
- 1/2 tsp cardamom powder
- 1/4 cup ghee (clarified butter)
- 1/4 cup cashews (chopped)
- 1/4 cup raisins
- 1/4 tsp saffron strands
- Water, as needed
Instructions
- In a bowl, mix the rice flour with enough water to make a smooth, thick batter.
- Heat a non-stick pan and pour a ladleful of batter onto it to make a pancake. Cook until both sides are golden brown. Repeat with the remaining batter to make more pancakes.
- In a separate pan, heat the jaggery with a little water to make a syrup. Strain to remove impurities.
- In a large pot, heat the coconut milk and add the jaggery syrup. Stir well.
- Add the cardamom powder and saffron strands to the pot and mix well. Let it simmer for a few minutes.
- Crumble the rice flour pancakes and add them to the pot. Mix gently to combine.
- In a small pan, heat the ghee and fry the cashews and raisins until golden. Add them to the pot and mix well.
- Simmer the payasam for a few more minutes until it reaches a creamy consistency.
