Ingredients

  • 2 cups rice flour
  • 1 cup jaggery (grated)
  • 4 cups coconut milk
  • 1/2 tsp cardamom powder
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup cashews (chopped)
  • 1/4 cup raisins
  • 1/4 tsp saffron strands
  • Water, as needed

Instructions

  1. In a bowl, mix the rice flour with enough water to make a smooth, thick batter.
  2. Heat a non-stick pan and pour a ladleful of batter onto it to make a pancake. Cook until both sides are golden brown. Repeat with the remaining batter to make more pancakes.
  3. In a separate pan, heat the jaggery with a little water to make a syrup. Strain to remove impurities.
  4. In a large pot, heat the coconut milk and add the jaggery syrup. Stir well.
  5. Add the cardamom powder and saffron strands to the pot and mix well. Let it simmer for a few minutes.
  6. Crumble the rice flour pancakes and add them to the pot. Mix gently to combine.
  7. In a small pan, heat the ghee and fry the cashews and raisins until golden. Add them to the pot and mix well.
  8. Simmer the payasam for a few more minutes until it reaches a creamy consistency.
