Sweet Salvadoran Pineapple Empanadas (Empanadas de Piña Dulces Salvadoreñas)

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup water
  • 2 cups diced pineapple
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Gradually add the water, mixing until the dough comes together. Divide the dough into 12 equal portions and shape each into a ball. Cover with a clean kitchen towel and let rest for 15 minutes.
  3. In a saucepan, combine the diced pineapple, brown sugar, cinnamon, nutmeg, vanilla extract, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool.
  4. On a floured surface, roll out each dough ball into a circle. Place a spoonful of the pineapple filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and press the edges to seal.
  5. In a deep skillet, heat the vegetable oil over medium heat. Fry the empanadas in batches until golden brown on both sides. Drain on paper towels.
  6. Serve the empanadas warm and enjoy!
