Sweet Salvadoran Pineapple Empanadas (Empanadas de Piña Dulces Salvadoreñas)

Ingredients
- 3 cups all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup water
- 2 cups diced pineapple
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon vanilla extract
- 1 tablespoon cornstarch
- Vegetable oil for frying
Instructions
- In a large bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add the water, mixing until the dough comes together. Divide the dough into 12 equal portions and shape each into a ball. Cover with a clean kitchen towel and let rest for 15 minutes.
- In a saucepan, combine the diced pineapple, brown sugar, cinnamon, nutmeg, vanilla extract, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool.
- On a floured surface, roll out each dough ball into a circle. Place a spoonful of the pineapple filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and press the edges to seal.
- In a deep skillet, heat the vegetable oil over medium heat. Fry the empanadas in batches until golden brown on both sides. Drain on paper towels.
