Sweet Sanya Khuna (मिठो सन्या खुना)

Ingredients

  • 1 liter full-fat milk
  • 1 cup sugar
  • 1/2 cup rice flour
  • 1/4 cup ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • Chopped nuts for garnish (optional)

Instructions

  1. Boil the milk in a heavy-bottomed pan over medium heat.
  2. Once the milk starts to boil, reduce the heat and let it simmer, stirring occasionally, until it reduces to half its original quantity.
  3. In a separate bowl, mix the rice flour with a little water to form a smooth paste.
  4. Gradually add the rice flour paste to the simmering milk, stirring continuously to avoid lumps.
  5. Add sugar and continue to cook, stirring, until the mixture thickens and reaches a custard-like consistency.
  6. Stir in the ghee and cardamom powder, and cook for another 5-10 minutes.
  7. Remove from heat and let it cool to room temperature.
  8. Once cooled, transfer the sweet sanya khuna to serving bowls and garnish with chopped nuts if desired.
