Ingredients
- 1 liter full-fat milk
- 1 cup sugar
- 1/2 cup rice flour
- 1/4 cup ghee (clarified butter)
- 1/4 teaspoon cardamom powder
- Chopped nuts for garnish (optional)
Instructions
- Boil the milk in a heavy-bottomed pan over medium heat.
- Once the milk starts to boil, reduce the heat and let it simmer, stirring occasionally, until it reduces to half its original quantity.
- In a separate bowl, mix the rice flour with a little water to form a smooth paste.
- Gradually add the rice flour paste to the simmering milk, stirring continuously to avoid lumps.
- Add sugar and continue to cook, stirring, until the mixture thickens and reaches a custard-like consistency.
- Stir in the ghee and cardamom powder, and cook for another 5-10 minutes.
- Remove from heat and let it cool to room temperature.
- Once cooled, transfer the sweet sanya khuna to serving bowls and garnish with chopped nuts if desired.
