Sweet Stuffed Pancake (holige)

Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 1/4 cup ghee (clarified butter)
  • 1/2 cup jaggery (or sugar)
  • 1/2 teaspoon cardamom powder
  • 1/4 cup grated coconut
  • 2 tablespoons chopped nuts (almonds, cashews, pistachios)
  • Water, as needed

Instructions

  1. In a bowl, mix the all-purpose flour, turmeric powder, and salt. Add water gradually to make a soft dough. Divide the dough into small balls and set aside.
  2. In a separate bowl, mix the jaggery (or sugar), cardamom powder, grated coconut, and chopped nuts to make the sweet stuffing.
  3. Take a dough ball, flatten it, and place a spoonful of the sweet stuffing in the center. Enclose the stuffing by bringing the edges of the dough together and sealing it properly.
  4. Roll out the stuffed dough ball into a thin pancake using a rolling pin and some flour for dusting.
  5. Cook the pancake on a hot griddle or pan until golden brown on both sides, using ghee as needed.
  6. Repeat the process for the remaining dough balls and sweet stuffing.
