Sweet Tamarind Chutney Delight

Ingredients

  • 2 cups tamarind pulp
  • 1 cup brown sugar
  • 1 cup water
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt

Instructions

  1. In a saucepan, combine tamarind pulp, brown sugar, and water. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
  2. Add ground cumin, ground ginger, cayenne pepper, and salt to the saucepan. Continue to simmer for another 20 minutes, until the chutney thickens.
  3. Remove from heat and let the chutney cool to room temperature. Transfer to a sterilized jar and refrigerate until ready to serve.
