Sweet Toluk Ash with Lentils (Толук аш с чечевицей)
Толук аш с чечевицей (Sweet Toluk Ash with Lentils) is a traditional Kyrgyz dish that combines the sweetness of fruits with the heartiness of lentils. This unique and flavorful soup is perfect for cold winter days and is sure to warm you up from the inside out.
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 3 carrots, diced
- 3 potatoes, cubed
- 1 cup dried apricots
- 1 cup prunes
- 1/2 cup raisins
- 1/4 cup sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 8 cups water
Instructions
- In a large pot, combine the water, lentils, onion, carrots, and potatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the dried apricots, prunes, raisins, sugar, salt, and black pepper. Continue to simmer for another 30 minutes, or until the lentils and vegetables are tender.
- Adjust seasoning to taste, adding more sugar or salt if desired.
- Serve hot and enjoy!
