Ingredients
- 1 lb sweetbreads, soaked and cleaned
- 1/2 cup all-purpose flour
- 4 tbsp unsalted butter
- 1/2 cup dry white wine
- 1 cup chicken broth
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions
- Coat the sweetbreads in flour and season with salt and pepper.
- In a large skillet, melt 2 tbsp of butter over medium heat.
- Add the sweetbreads and cook until golden brown on all sides, about 8-10 minutes.
- Remove the sweetbreads from the skillet and set aside.
- In the same skillet, add the remaining butter and flour to make a roux.
- Slowly pour in the white wine and chicken broth, stirring constantly until the sauce thickens.
- Stir in the heavy cream and season with salt and pepper to taste.
- Return the sweetbreads to the skillet and simmer for an additional 10 minutes, until the sweetbreads are cooked through and the sauce is thick and creamy.
