Ingredients
- 4 large bell peppers
- 1 bunch Swiss chard, chopped
- 1 cup crumbled feta cheese

- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the chopped Swiss chard, feta cheese, cooked quinoa, pine nuts, minced garlic, and olive oil. Season with salt and pepper.
- Stuff the mixture into the hollowed-out bell peppers.
