Swiss Chard And Feta Stuffed Peppers

Ingredients

  • 4 large bell peppers
  • 1 bunch Swiss chard, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup cooked quinoa
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the chopped Swiss chard, feta cheese, cooked quinoa, pine nuts, minced garlic, and olive oil. Season with salt and pepper.
  4. Stuff the mixture into the hollowed-out bell peppers.
