Ingredients

  • 1 pork tenderloin
  • 1 cup Swiss cheese, shredded
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut a lengthwise slit down the center of the pork tenderloin, being careful not to cut all the way through.
  3. In a bowl, mix together the Swiss cheese, garlic, parsley, thyme, salt, and pepper.
  4. Stuff the cheese mixture into the slit of the pork tenderloin.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear the stuffed pork tenderloin on all sides until browned, about 2 minutes per side.
