- 1 1/2 lb beef tenderloin
- 1 cup Swiss cheese, shredded

Instructions
- Preheat the oven to 375°F (190°C).
- Cut a lengthwise slit down the center of the beef tenderloin, creating a pocket for the stuffing.
- In a bowl, mix together the Swiss cheese, mushrooms, garlic, and olive oil. Season with salt and pepper.
- Stuff the cheese and mushroom mixture into the pocket of the beef tenderloin.
- Secure the opening with kitchen twine or toothpicks.
- Season the outside of the beef tenderloin with salt and pepper.
- Place the stuffed beef tenderloin on a roasting pan and roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
- Remove the beef tenderloin from the oven and let it rest for 10 minutes before slicing.
- Slice the stuffed beef tenderloin and serve hot.
