Swiss Chocolate Mousse

Ingredients
- 200g dark chocolate, chopped
- 3 eggs, separated
- 50g granulated sugar
- 250ml heavy cream
- 1 tsp vanilla extract
Instructions
- In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Once melted, set aside to cool slightly.
- In a separate bowl, whisk the egg yolks with half of the sugar until pale and thick. Stir in the melted chocolate and vanilla extract.
- In another bowl, whip the heavy cream until soft peaks form. In a separate clean bowl, whisk the egg whites with the remaining sugar until stiff peaks form.
- Gently fold the whipped cream into the chocolate mixture, followed by the whipped egg whites, until fully combined.
- Divide the mousse into serving glasses and refrigerate for at least 2 hours before serving.
