Sylheti Bhuna Chicken (Sylheti-style Spicy Chicken Curry)

Ingredients

  • 1.5 lb (700g) chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a large pan and add cumin seeds, cinnamon stick, and cardamom pods. Sauté until fragrant.
  2. Add the chopped onions and cook until golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies. Cook for 2 minutes.
  4. Add the chicken pieces and cook until they are sealed and browned.
  5. Next, add the tomato puree, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook for 5 minutes.
  6. Whisk the yogurt and pour it into the pan. Stir well to combine.
  7. Cover and cook the chicken on low heat for 20-25 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.
  8. Garnish with fresh cilantro leaves before serving.
