Sylheti Bhuna Goat (Sylheti-style Spicy Goat Curry)

Ingredients

  • 1 kg goat meat, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, finely chopped
  • 1/4 cup plain yogurt
  • 4 cloves garlic, minced
  • 2-inch piece ginger, grated
  • 2 green chilies, slit
  • 1/4 cup mustard oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat mustard oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add the chopped onions and cook until golden brown.
  3. Add the minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
  4. Add the goat meat and cook until it changes color.
  5. Stir in the chopped tomatoes and cook until they soften.
  6. Add the yogurt, coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well.
  7. Cover the pan and cook on low heat for about 1.5 hours, stirring occasionally, until the meat is tender and the oil separates from the masala.
  8. Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
