Sylheti Bhuna Lamb (Sylheti-style Spicy Lamb Curry)

Ingredients

  • 1 kg lamb, cut into pieces
  • 3 onions, finely chopped
  • 4 tomatoes, pureed
  • 1/4 cup plain yogurt
  • 3-4 green chilies, slit
  • 2 tbsp ginger-garlic paste
  • 1/4 cup vegetable oil
  • 1 tsp cumin seeds
  • 2 bay leaves
  • 4-5 whole dried red chilies
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds, bay leaves, and whole dried red chilies. Sauté until fragrant.
  2. Add the chopped onions and cook until golden brown.
  3. Stir in the ginger-garlic paste and cook for 2-3 minutes.
  4. Add the lamb pieces and cook until they are browned on all sides.
  5. Once the lamb is browned, add the tomato puree, yogurt, green chilies, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Cover the pan and let the lamb cook in its own juices for about 45 minutes, stirring occasionally.
  7. Once the lamb is tender, sprinkle garam masala and garnish with fresh coriander leaves.
  8. Serve the Sylheti-style Spicy Lamb Curry hot with steamed rice or naan.
