Sylheti Bhuna Lamb (Sylheti-style Spicy Lamb Curry)
Sylheti-style Spicy Lamb Curry, also known as Sylheti Bhuna Lamb, is a popular dish from the Sylhet region of Bangladesh. This flavorful and aromatic curry is made with tender pieces of lamb cooked in a rich and spicy gravy, perfect for serving with steamed rice or naan.
Ingredients
- 1 kg lamb, cut into pieces
- 3 onions, finely chopped
- 4 tomatoes, pureed
- 1/4 cup plain yogurt
- 3-4 green chilies, slit
- 2 tbsp ginger-garlic paste
- 1/4 cup vegetable oil
- 1 tsp cumin seeds
- 2 bay leaves
- 4-5 whole dried red chilies
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 2 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds, bay leaves, and whole dried red chilies. Sauté until fragrant.
- Add the chopped onions and cook until golden brown.
- Stir in the ginger-garlic paste and cook for 2-3 minutes.
- Add the lamb pieces and cook until they are browned on all sides.
- Once the lamb is browned, add the tomato puree, yogurt, green chilies, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Cover the pan and let the lamb cook in its own juices for about 45 minutes, stirring occasionally.
- Once the lamb is tender, sprinkle garam masala and garnish with fresh coriander leaves.
- Serve the Sylheti-style Spicy Lamb Curry hot with steamed rice or naan.
