Ingredients

  • 1 kg pork, cut into cubes
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 3-4 green chilies, sliced
  • 1 teaspoon turmeric powder
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 cup plain yogurt
  • 4 tablespoons mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the mustard oil in a large pan over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies. Cook for 2-3 minutes.
  4. Add the pork cubes to the pan and cook until they are browned on all sides.
  5. Reduce the heat and add the turmeric, cumin, coriander, red chili powder, and salt. Mix well.
  6. Pour in the plain yogurt and stir to combine with the spices and pork.
  7. Cover the pan and let the pork cook in its own juices for 40-45 minutes, stirring occasionally.
  8. Sprinkle garam masala over the pork and mix it in gently.
  9. Garnish with fresh coriander leaves before serving.
