Symphony of Aromas (Symphonie d'arômes)

Ingredients

Instructions

  1. Season the filet mignon with salt and pepper.
  2. Heat a pan over medium-high heat and sear the filet mignon on all sides until browned.
  3. Remove the filet mignon from the pan and set aside.
  4. In the same pan, sauté the shallots until translucent.
  5. Add the red wine and thyme to the pan, and simmer until the wine is reduced by half.
  6. Pour in the beef stock and return the filet mignon to the pan.
  7. Cover and cook for 10-15 minutes for medium-rare, or to your desired level of doneness.
  8. Slice the filet mignon and serve with the red wine reduction sauce.
