Syrian Date and Walnut Cookies (Ma'amoul)

Ingredients

  • 2 cups semolina
  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup rose water
  • 1 cup pitted dates, chopped
  • 1/2 cup walnuts, finely chopped

Instructions

  1. In a large bowl, mix the semolina, melted butter, sugar, and rose water until well combined.
  2. In a separate bowl, mix the chopped dates and walnuts together.
  3. Take a small portion of the semolina dough and flatten it in your palm. Place a small amount of the date and walnut mixture in the center, then carefully enclose the filling with the dough, shaping it into a ball.
  4. Place the filled cookies on a baking sheet and bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the bottoms are golden brown.
  5. Allow the ma'amoul to cool before serving.
