Ingredients
- 1 lb farmer's cheese
- 2 eggs
- 1/4 cup sugar
- 1/4 cup all-purpose flour
- 1/2 tsp vanilla extract
- 1/4 cup raisins (optional)
- 1/4 cup vegetable oil for frying
Instructions
- In a large bowl, mix together the farmer's cheese, eggs, sugar, flour, and vanilla extract until well combined. If using raisins, gently fold them into the mixture.
- Heat the vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the cheese mixture and form it into a small pancake. Place it in the skillet and gently flatten it with a spatula. Repeat with the remaining cheese mixture, cooking in batches if necessary.
- Cook the syrniki for 3-4 minutes on each side, or until they are golden brown and cooked through.
- Transfer the cooked syrniki to a paper towel-lined plate to drain any excess oil.
