Ingredients

  • 4 packs of ramen noodles
  • 4 cups vegetable broth
  • 2 tablespoons Szechuan peppercorns
  • 1/4 cup white miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 block firm tofu, cubed
  • 4 green onions, thinly sliced
  • 4 soft-boiled eggs, halved

Instructions

  1. In a large pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the Szechuan peppercorns, miso paste, soy sauce, and sesame oil to the broth. Stir to combine and let it simmer for 10 minutes.
  3. Cook the ramen noodles according to the package instructions. Drain and set aside.
  4. Add the cubed tofu to the broth and let it simmer for an additional 5 minutes.
  5. Divide the cooked noodles among 4 bowls. Ladle the hot broth and tofu over the noodles.
  6. Garnish each bowl with sliced green onions and a soft-boiled egg half.
