Ingredients
- 4 packs of ramen noodles
- 4 cups vegetable broth

- 1/4 cup white miso paste

- 1 block firm tofu, cubed
- 4 green onions, thinly sliced
- 4 soft-boiled eggs, halved
Instructions
- In a large pot, bring the vegetable broth to a simmer over medium heat.
- Add the Szechuan peppercorns, miso paste, soy sauce, and sesame oil to the broth. Stir to combine and let it simmer for 10 minutes.
- Cook the ramen noodles according to the package instructions. Drain and set aside.
- Add the cubed tofu to the broth and let it simmer for an additional 5 minutes.
- Divide the cooked noodles among 4 bowls. Ladle the hot broth and tofu over the noodles.
- Garnish each bowl with sliced green onions and a soft-boiled egg half.
