Ingredients

  • 1 pound pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar
  • 3 tablespoons sugar
  • 1 tablespoon Shaoxing wine
  • 2 teaspoons Sichuan peppercorns
  • 3-4 dried red chilies, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green onions, chopped
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Sesame seeds for garnish

Instructions

  1. In a bowl, marinate the pork slices with soy sauce and Shaoxing wine for 15 minutes.
  2. In a separate bowl, mix the Chinese black vinegar, sugar, and cornstarch to make the sweet and sour sauce.
  3. Heat the vegetable oil in a wok or skillet over high heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry for 30 seconds.
  4. Add the marinated pork slices and stir-fry until they are cooked through.
  5. Push the pork to the side of the wok, add a bit more oil if needed, and stir-fry the garlic and ginger until fragrant.
  6. Pour in the sweet and sour sauce, and stir until the sauce thickens and coats the pork.
  7. Stir in the green onions, then transfer the dish to a serving plate and garnish with sesame seeds.
