Szechuan Spiced Tofu Explosion (四川麻辣豆腐爆炒)

Ingredients

  • 1 block (14 oz) firm tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 3-4 cloves garlic, minced
  • 1 inch ginger, minced
  • 2-3 green onions, chopped
  • 1-2 tbsp Sichuan peppercorns
  • 3-4 dried red chili peppers
  • 2 tbsp soy sauce
  • 1 tbsp Chinese cooking wine
  • 1 tsp sugar
  • 1/2 cup vegetable broth
  • 1 tsp cornstarch mixed with 2 tsp water

Instructions

  1. Heat vegetable oil in a wok over high heat.
  2. Add Sichuan peppercorns and dried red chili peppers, and stir-fry until fragrant.
  3. Add garlic, ginger, and green onions, and stir-fry for another minute.
  4. Add tofu cubes and stir-fry until lightly browned.
  5. Pour in soy sauce, cooking wine, sugar, and vegetable broth. Bring to a simmer.
  6. Add the cornstarch mixture and stir until the sauce thickens.
  7. Transfer to a serving dish and serve hot.
