Szechuan Tofu (四川豆腐)

Ingredients

  • 1 block of firm tofu, cut into cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon Szechuan peppercorns
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, chopped
  • 1 red bell pepper, sliced
  • 1 tablespoon chili paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 cup vegetable broth

Instructions

  1. In a small bowl, mix the soy sauce and Szechuan peppercorns. Marinate the tofu cubes in this mixture for 10 minutes.
  2. Heat the vegetable oil in a large pan over medium heat. Add the marinated tofu cubes and cook until golden brown on all sides. Remove the tofu from the pan and set aside.
  3. In the same pan, add the garlic, ginger, green onions, and red bell pepper. Stir-fry for 2-3 minutes.
  4. Add the chili paste, rice vinegar, sugar, and vegetable broth to the pan. Stir to combine.
  5. Return the cooked tofu to the pan and toss to coat in the sauce. Cook for an additional 5 minutes, allowing the flavors to meld together.
  6. Serve the Szechuan tofu hot, garnished with additional green onions if desired.
