Szechuan Tofu Stir-fry

Ingredients

  • 1 block of firm tofu, cubed
  • 2 tablespoons Szechuan sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a small bowl, mix the Szechuan sauce, soy sauce, and sesame oil. Set aside.
  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the pan and set aside.
  4. In the same pan, add the onion, garlic, and ginger. Stir-fry for 2-3 minutes until fragrant.
  5. Add the bell peppers and snap peas to the pan. Cook for another 2-3 minutes until the vegetables are tender-crisp.
  6. Return the tofu to the pan and pour the Szechuan sauce mixture over the tofu and vegetables. Toss to coat everything evenly.
  7. Season with salt and pepper, then garnish with chopped green onions before serving.
