Szechuan Vegetable Stir-fry

Ingredients

  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 3 tbsp Szechuan sauce
  • 2 tbsp vegetable oil
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over high heat.
  2. Add minced garlic and ginger, and stir-fry for 30 seconds.
  3. Add mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
  4. Add Szechuan sauce, salt, and black pepper. Stir-fry for another 2 minutes.
  5. Remove from heat and serve hot.
