Ingredients

  • 2 cups dried fava beans or chickpeas, soaked overnight
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 1 teaspoon baking powder
  • Vegetable oil for frying
  • 1/2 cup tahini
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt to taste

Instructions

  1. Drain the soaked fava beans or chickpeas and place them in a food processor.
  2. Add the onion, garlic, parsley, cumin, coriander, cayenne pepper, and salt to the food processor.
  3. Pulse the mixture until it forms a coarse paste. Transfer the mixture to a bowl.
  4. Stir in the baking powder. Cover the bowl and refrigerate for 1 hour.
  5. While the mixture chills, prepare the tahini sauce by whisking together the tahini, water, lemon juice, garlic, and salt. Set aside.
  6. Heat vegetable oil in a deep skillet over medium heat.
  7. Form the chilled taameya mixture into small balls or patties and carefully place them in the hot oil.
  8. Fry the taameya until golden brown and crispy, then transfer to a paper towel-lined plate to drain excess oil.
  9. Serve the taameya hot with the tahini sauce for dipping.
