Ingredients

  • 1 kg lamb ribs
  • 1 cup yogurt
  • 2 tsp ginger-garlic paste
  • 1 tsp fennel powder
  • 1 tsp dry ginger powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Oil for deep frying

Instructions

  1. Wash the lamb ribs and pat them dry.
  2. In a bowl, mix yogurt, ginger-garlic paste, fennel powder, dry ginger powder, turmeric powder, garam masala, and salt to make a marinade.
  3. Marinate the lamb ribs with the prepared mixture and let it sit for at least 2 hours or overnight in the refrigerator.
  4. Heat oil in a deep pan and deep-fry the marinated lamb ribs until they are golden brown and crispy.
  5. Remove the fried ribs from the oil and place them on a paper towel to drain excess oil.
  6. तबक माज़ (Tabak Maaz) is ready to be served hot with steamed rice or naan.
