Tabbouleh (grilled Chicken Shawarma Salad)
Tabbouleh is a popular Middle Eastern salad made with fresh herbs, vegetables, and bulgur. In this recipe, we'll be adding a delicious twist by incorporating grilled chicken shawarma for a flavorful and satisfying meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tbsp shawarma seasoning
- 1 cup bulgur, cooked and cooled
- 1 large cucumber, diced
- 4 tomatoes, diced
- 1 red onion, finely chopped
- 1 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, combine the olive oil and shawarma seasoning. Add the chicken breasts and coat them well. Let marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked. Let it rest for a few minutes, then slice it into strips.
- In a large bowl, combine the cooked bulgur, cucumber, tomatoes, red onion, parsley, and mint.
- Add the grilled chicken strips to the bowl.
- Drizzle the lemon juice over the salad and toss to combine. Season with salt and pepper to taste.
- Refrigerate the tabbouleh for at least 30 minutes before serving to allow the flavors to meld together.
