Tabbouleh is a popular Middle Eastern salad made with fresh herbs, vegetables, and bulgur. In this recipe, we'll be adding a delicious twist by incorporating grilled chicken shawarma for a flavorful and satisfying meal.

Tabbouleh (grilled Chicken Shawarma Salad)

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp shawarma seasoning
  • 1 cup bulgur, cooked and cooled
  • 1 large cucumber, diced
  • 4 tomatoes, diced
  • 1 red onion, finely chopped
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the olive oil and shawarma seasoning. Add the chicken breasts and coat them well. Let marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked. Let it rest for a few minutes, then slice it into strips.
  3. In a large bowl, combine the cooked bulgur, cucumber, tomatoes, red onion, parsley, and mint.
  4. Add the grilled chicken strips to the bowl.
  5. Drizzle the lemon juice over the salad and toss to combine. Season with salt and pepper to taste.
  6. Refrigerate the tabbouleh for at least 30 minutes before serving to allow the flavors to meld together.
