Ingredients

  • 1 cup cooked chickpeas
  • 1/2 cup bulgur, soaked in water for 30 minutes

  • 1/2 cup chopped fresh mint
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup olive oil
  • 1/4 cup lemon juice

  • 2 cups prepared hummus

Instructions

  1. In a large bowl, combine the chickpeas, soaked bulgur, parsley, mint, tomatoes, and red onion.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour this dressing over the chickpea and bulgur mixture and toss to combine.
  3. Spread the hummus on a serving platter and create a well in the center.
  4. Spoon the tabbouleh mixture into the well of the hummus.
