Ingredients

  • 1 cup couscous
  • 1 1/2 cups water
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 2 tomatoes, diced
  • 1/2 cucumber, diced
  • 1/4 cup finely chopped red onion

Instructions

  1. In a medium saucepan, bring the water to a boil. Stir in the couscous, cover the saucepan, and remove it from the heat. Let it stand for 5 minutes, then fluff with a fork and transfer to a large bowl to cool.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour this dressing over the couscous and mix well.
  3. Add the chopped parsley, mint, tomatoes, cucumber, and red onion to the couscous. Toss everything together until well combined.
  4. Refrigerate the tabbouleh for at least 1 hour before serving to allow the flavors to meld together.
