Ingredients
- 1 cup couscous
- 1 1/2 cups water
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chopped fresh parsley
- 1/2 cup chopped fresh mint
- 2 tomatoes, diced
- 1/2 cucumber, diced
- 1/4 cup finely chopped red onion
Instructions
- In a medium saucepan, bring the water to a boil. Stir in the couscous, cover the saucepan, and remove it from the heat. Let it stand for 5 minutes, then fluff with a fork and transfer to a large bowl to cool.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour this dressing over the couscous and mix well.
- Add the chopped parsley, mint, tomatoes, cucumber, and red onion to the couscous. Toss everything together until well combined.
- Refrigerate the tabbouleh for at least 1 hour before serving to allow the flavors to meld together.
