Ingredients

  • 1 cup couscous
  • 1 1/2 cups water
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cucumber, diced
  • 4 tomatoes, diced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 red onion, finely chopped

Instructions

  1. In a medium saucepan, bring the water to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff the couscous with a fork and transfer it to a large bowl to cool.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour the dressing over the cooled couscous and toss to combine.
  3. Add the diced cucumber, tomatoes, parsley, mint, and red onion to the couscous. Gently toss the salad until all the ingredients are well mixed.
