Tabbouleh (moroccan Couscous Salad)

Ingredients
- 1 cup couscous
- 1 1/2 cups water
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cucumber, diced
- 4 tomatoes, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 red onion, finely chopped
Instructions
- In a medium saucepan, bring the water to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff the couscous with a fork and transfer it to a large bowl to cool.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour the dressing over the cooled couscous and toss to combine.
- Add the diced cucumber, tomatoes, parsley, mint, and red onion to the couscous. Gently toss the salad until all the ingredients are well mixed.
- Refrigerate the tabbouleh for at least 1 hour before serving to allow the flavors to meld together.
