Ingredients
- 1 cup bulgur wheat
- 1 1/2 cups boiling water
- 2 cups chopped tomatoes
- 2 cups chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/2 cup finely chopped red onion
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, pour the boiling water over the bulgur. Cover and let stand for 15 minutes.
- Fluff the bulgur with a fork and let it cool to room temperature.
- Add the tomatoes, parsley, mint, and red onion to the bulgur.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
