Tabouleh (libyan Couscous Salad)
Tabouleh is a refreshing and flavorful salad that originates from Libyan cuisine. This dish is made with couscous, fresh herbs, and vegetables, making it a perfect side dish or light meal.
Ingredients
- 1 cup couscous
- 1 1/2 cups water
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- Salt and pepper to taste
Instructions
- In a medium bowl, pour the couscous and cover with boiling water. Let it sit for 5 minutes, then fluff with a fork.
- In a small bowl, whisk together the olive oil and lemon juice. Pour over the couscous and mix well.
- Add the chopped parsley, mint, tomatoes, cucumber, and red onion to the couscous. Toss to combine.
- Season with salt and pepper to taste.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
