Ingredients

  • 1 cup couscous
  • 1 1/2 cups water
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, pour the couscous and cover with boiling water. Let it sit for 5 minutes, then fluff with a fork.
  2. In a small bowl, whisk together the olive oil and lemon juice. Pour over the couscous and mix well.
  3. Add the chopped parsley, mint, tomatoes, cucumber, and red onion to the couscous. Toss to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
