Ingredients
- 1 lb conch, cleaned and diced
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1 jalapeno pepper, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- Lime wedges for serving
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the onion, garlic, bell pepper, tomato, and jalapeno pepper. Cook until the vegetables are softened.
- Add the diced conch, cumin, paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
- Warm the flour tortillas in a separate skillet or in the oven.
- Assemble the tacos by placing the conch mixture on each tortilla, then topping with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
- Serve the tacos with lime wedges on the side.
