Taco Konk Pedas (spicy Conch Tacos)

Ingredients

  • 1 lb conch, cleaned and diced
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1 jalapeno pepper, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Lime wedges for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the onion, garlic, bell pepper, tomato, and jalapeno pepper. Cook until the vegetables are softened.
  3. Add the diced conch, cumin, paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
  4. Warm the flour tortillas in a separate skillet or in the oven.
  5. Assemble the tacos by placing the conch mixture on each tortilla, then topping with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
  6. Serve the tacos with lime wedges on the side.
