Tacos De Moqueca (moqueca Tacos)
Tacos de Moqueca, a fusion of Brazilian and Mexican cuisines, are a delicious twist on traditional tacos. This recipe combines the flavors of Moqueca, a Brazilian fish stew, with the convenience and portability of tacos.
Ingredients
- 1 lb white fish fillets, such as cod or tilapia
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- 8 small corn tortillas
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
- Add the bell peppers to the skillet and cook until they begin to soften.
- Stir in the diced tomatoes, coconut milk, lime juice, and paprika. Season with salt and pepper to taste.
- Gently place the fish fillets into the skillet, spooning the sauce over the top. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
- While the fish is cooking, warm the corn tortillas in a separate skillet or in the oven.
- Once the fish is done, use a fork to flake it into large chunks in the skillet.
- Assemble the tacos by spooning the fish and vegetable mixture onto the warm tortillas.
- Serve the Moqueca Tacos with your favorite toppings, such as avocado, cilantro, and hot sauce.
