Ingredients

  • 1.5 kg beef (Tafelspitz)
  • 4 carrots
  • 2 onions
  • 1 leek
  • 4 parsley roots
  • 6 black peppercorns
  • 4 juniper berries
  • Salt
  • 1 cup sour cream
  • 4 tbsp grated horseradish
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste

Instructions

  1. Place the beef in a large pot and cover with water.
  2. Add the carrots, onions, leek, parsley roots, peppercorns, juniper berries, and a pinch of salt.
  3. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the beef is tender.
  4. While the beef is cooking, prepare the horseradish sauce by mixing the sour cream, grated horseradish, white wine vinegar, salt, and pepper in a bowl.
  5. Once the beef is cooked, remove it from the pot and slice it thinly.
  6. Serve the sliced beef with the horseradish sauce and the cooked vegetables from the pot.
