Ingredients

- 4 carrots
- 2 onions
- 1 leek
- 4 parsley roots

- 1 tbsp white wine vinegar
- Salt and pepper to taste
Instructions
- Place the beef in a large pot and cover with water.
- Add the carrots, onions, leek, parsley roots, peppercorns, juniper berries, and a pinch of salt.
- Bring to a boil, then reduce the heat and simmer for 2 hours, or until the beef is tender.
- While the beef is cooking, prepare the horseradish sauce by mixing the sour cream, grated horseradish, white wine vinegar, salt, and pepper in a bowl.
- Once the beef is cooked, remove it from the pot and slice it thinly.
- Serve the sliced beef with the horseradish sauce and the cooked vegetables from the pot.
