Tagine Bil Lahm (spiced Lamb Tagine)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp saffron threads
  • 1/2 cup dried apricots
  • 1/2 cup pitted green olives
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a tagine or large pot over medium heat.
  2. Add the chopped onions and cook until softened.
  3. Add the lamb chunks and brown on all sides.
  4. Stir in the garlic, cumin, ginger, cinnamon, turmeric, and saffron. Cook for 2 minutes.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the dried apricots and olives, then cover and simmer for 1.5 to 2 hours, or until the lamb is tender.
  7. Season with salt and pepper to taste.
  8. Serve the spiced lamb tagine hot with couscous or crusty bread.
