Tagine Bil Lahm (spiced Lamb Tagine)
Tagine bil Lahm is a traditional Moroccan dish of spiced lamb cooked with a variety of aromatic ingredients. This slow-cooked stew is bursting with flavors and is perfect for a cozy family meal or special gatherings.
Ingredients
- 2 lbs lamb, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp saffron threads
- 1/2 cup dried apricots
- 1/2 cup pitted green olives
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a tagine or large pot over medium heat.
- Add the chopped onions and cook until softened.
- Add the lamb chunks and brown on all sides.
- Stir in the garlic, cumin, ginger, cinnamon, turmeric, and saffron. Cook for 2 minutes.
- Pour in the chicken broth and bring to a simmer.
- Add the dried apricots and olives, then cover and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Season with salt and pepper to taste.
- Serve the spiced lamb tagine hot with couscous or crusty bread.
