Ingredients

  • 1 1/2 lbs lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh cilantro for garnish

Instructions

  1. In a tagine or large skillet, heat the olive oil over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove from the tagine and set aside.
  3. In the same tagine, sauté the onion and garlic until softened.
  4. Add the ground cumin, coriander, cinnamon, and cayenne pepper, and cook for 1 minute to toast the spices.
  5. Return the lamb to the tagine and add the chickpeas, diced tomatoes, and broth. Season with salt and pepper.
  6. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 1 hour, or until the lamb is tender.
  7. Adjust the seasoning if needed, then garnish with chopped cilantro before serving.
