Ingredients

  • 1 lb white fish fillets, such as cod or haddock
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup green olives, pitted
  • 2 preserved lemons, cut into wedges
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 1/2 cup water
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a tagine or large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Place the fish fillets on top of the onion and spice mixture in the tagine or skillet.
  5. Add the green olives and preserved lemon wedges around the fish.
  6. Pour the water over the fish and season with salt and pepper.
  7. Cover and simmer for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Garnish with fresh cilantro before serving.
