Tagine Djaj (algerian Lamb And Chickpea Tagine)

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tomatoes, diced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a tagine or large pot over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove and set aside.
  3. Saute the chopped onion and minced garlic until softened.
  4. Stir in the ground cumin, coriander, paprika, cinnamon, and cayenne pepper, and cook for 1 minute.
  5. Return the lamb to the pot and add the diced tomatoes, chickpeas, and chicken broth.
  6. Season with salt and pepper, then bring to a simmer.
  7. Cover and cook over low heat for 1.5 to 2 hours, or until the lamb is tender.
  8. Serve the tagine djaj hot, garnished with fresh cilantro or parsley.
