Ingredients

  • 500g white fish fillets, such as snapper or grouper
  • 2 tomatoes, diced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a tagine or large skillet, heat the olive oil over medium heat.
  2. Add the sliced onion and cook until softened, about 5 minutes.
  3. Add the minced garlic, ground cumin, ground coriander, ground turmeric, ground ginger, ground cinnamon, ground cloves, and ground nutmeg. Cook for 2 minutes, stirring constantly.
  4. Add the diced tomatoes, sliced red chili, and half of the chopped cilantro and parsley. Cook for another 5 minutes.
  5. Season the fish fillets with salt and pepper, then place them on top of the tomato mixture in the tagine or skillet.
  6. Cover and simmer for 20-25 minutes, or until the fish is cooked through.
  7. Garnish with the remaining chopped cilantro and parsley before serving.
