Ingredients
- 500g white fish fillets, such as snapper or grouper
- 2 tomatoes, diced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 red chili, sliced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
Instructions
- In a tagine or large skillet, heat the olive oil over medium heat.
- Add the sliced onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, ground turmeric, ground ginger, ground cinnamon, ground cloves, and ground nutmeg. Cook for 2 minutes, stirring constantly.
- Add the diced tomatoes, sliced red chili, and half of the chopped cilantro and parsley. Cook for another 5 minutes.
- Season the fish fillets with salt and pepper, then place them on top of the tomato mixture in the tagine or skillet.
- Cover and simmer for 20-25 minutes, or until the fish is cooked through.
- Garnish with the remaining chopped cilantro and parsley before serving.
