Ingredients

  • 500g white fish fillets, cut into chunks
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a tagine or large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
  3. Stir in the ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
  5. Gently place the fish chunks into the tagine, spooning the tomato mixture over the fish.
  6. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
  7. Season with salt and pepper, then garnish with chopped cilantro before serving.
