Ingredients
- 500g white fish fillets, cut into chunks
- 2 tomatoes, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red chili, sliced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil
- Salt to taste

Instructions
- In a tagine or large skillet, heat the olive oil over medium heat.
- Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
- Stir in the ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
- Gently place the fish chunks into the tagine, spooning the tomato mixture over the fish.
- Cover and simmer for 15-20 minutes, or until the fish is cooked through.
- Season with salt and pepper, then garnish with chopped cilantro before serving.
