Tagine Lablabi is a traditional Algerian dish that combines tender lamb with sweet pumpkin in a flavorful and aromatic tagine. This hearty and comforting stew is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1.5 lbs lamb, cut into chunks
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 2 cups pumpkin, peeled and cut into chunks
- 1 can chickpeas, drained and rinsed
- 2 cups chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a tagine or large pot over medium heat.
- Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Stir in the ground cumin, coriander, and cinnamon, and cook for 1 minute.
- Add the pumpkin, chickpeas, and browned lamb back into the pot.
- Pour in the chicken broth and season with salt and pepper.
- Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the pumpkin is cooked through.
- Garnish with fresh cilantro before serving.
