Tagine Lablabi (algerian Lamb And Pumpkin Tagine)

Ingredients

  • 1.5 lbs lamb, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 2 cups pumpkin, peeled and cut into chunks
  • 1 can chickpeas, drained and rinsed
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a tagine or large pot over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Stir in the ground cumin, coriander, and cinnamon, and cook for 1 minute.
  5. Add the pumpkin, chickpeas, and browned lamb back into the pot.
  6. Pour in the chicken broth and season with salt and pepper.
  7. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the pumpkin is cooked through.
  8. Garnish with fresh cilantro before serving.
